Ingredients

  • 150 g Gouda
  • 600 g firm boiling potatoes
  • Salz
  • 50 g sun-dried tomatoes (in oil)
  • 2 tsp pickled green peppercorns (jar)
  • basil for garnish

Instructions

    Place the cheese in a freezer for about 30 minutes. Wash the potatoes thoroughly and cut them unpeeled into slices about 0.5 cm thick. Boil in salted water for approximately 5 minutes, then drain, rinse with cold water, let dry, and pat dry. Drain the tomatoes and reserve the oil. Drain the peppercorns and roughly chop. Grate the cheese and slice the tomatoes into strips.

    Brush four pieces of aluminum foil (about 30 x 30 cm) with tomato oil. Mix potatoes, tomatoes, peppercorns, and cheese with the remaining tomato oil (or a bit of olive oil) and spread onto the foil squares. Seal each packet. Grill the potato packets on a hot grill rack for about 10 minutes, turning occasionally. Open the packets to serve and garnish with basil.
