Ingredients
- 2 EL plant oil
- 3 EL orange juice
- 2 EL freshly chopped parsley
- 40 g dried cranberries
- 40 g pistachio nuts
- 1 salmon ca. 800 g (ready to cook, with skin)
- Salt
- Pepper
Instructions

Preheat the oven to 180°C (356°F) with fan and top heat. Lightly oil an oval, oven-safe pan.

Mix the remaining oil with orange juice and parsley. Chop cranberries with pistachio nuts.

Rinse the salmon, pat dry, place in the pan. Drizzle with the mixture, season with salt and pepper. Sprinkle with cranberries and pistachios and bake for about 25 minutes.

Periodically spoon more of the mixture over the fish while baking.
