Baked Orange Pudding

Delicious, fresh and easy to prepare: Baked Orange Pudding from Spoonsparrow is a perfect dessert treat.

Ingredients

  • 1 Organic Orange
  • 60 g raw cane sugar (3 tbsp)
  • 3 eggs
  • 200 g heavy cream (30% fat)
  • 200 ml milk (1.5% fat)

Instructions

    Rinse the orange hot and grate it dry. Scrape off the zest, cut the orange in half, and squeeze out the juice. Boil the zest and juice with 2 tbsp raw cane sugar and let cool briefly. Then whisk in the eggs until creamy, gradually pouring in the cream and milk while stirring constantly. Pour the mixture into molds and sprinkle with remaining sugar.

    Place the molds on a deep baking tray. Pour hot water over the tray until the molds sit about one-third submerged in a bain-marie. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for approximately 45 minutes, allowing it to set.

    Remove the baked orange pudding from the oven, let it cool, and serve.
