Baked Oats with Blackberries
Spoonsparrow's Baked Oats with Blackberries are packed with fiber and antioxidants, making them the perfect start to a chilly day.
Ingredients
- 100 g rolled oats
- Pinch of salt
- 1 tsp cinnamon
- 45 g walnuts (3 tbsp)
- 200 g blackberries
- 200 g Hokkaido pumpkin (1/4 Hokkaido pumpkin)
- 1 apple
- 180 ml oat drink (oat milk)
- 1 tsp melted coconut oil

Place the rolled oats in a large bowl and pour 200 ml of boiling water over them. Add a pinch of salt and cinnamon, stir everything well, and let it swell for 10 minutes.

In the meantime, roughly chop the walnuts and wash the blackberries. Wash, deseed, and finely grate the Hokkaido pumpkin. Wash, halve, deseed, and also finely grate the apple. Add the oat drink, walnuts, blackberries, apple and pumpkin shreds to the rolled oats and mix well.

Grease a baking dish (26 x 20 cm) with melted coconut oil and spread the oat-blackberry mixture in it. Drizzle with honey and bake in a preheated oven at 180 °C (160 °C fan; Gas: Mark 2–3) for 20–25 minutes.
