Avocado with Salmon and Eggs

Avocado with salmon and eggs from Spoonsparrow is perfect as a low-carb breakfast.

Ingredients

  • 2 Avocados
  • 2 tsp Olive oil
  • Salt
  • Pepper
  • 150 g Smoked salmon
  • 4 eggs
  • 0.5 Red Onion
  • 2 sprigs parsley

Instructions

    Wash avocados, pat dry, cut in half, remove pits, and brush the cut surfaces with a little oil; enlarge the cavities with a spoon (use the scooped-out pulp elsewhere).

    Place avocados side by side in a greased baking dish, salt and pepper, and line the indentations with 1 slice of smoked salmon and slide 1 egg into each. Bake avocados in a preheated oven at 200 °C (180 °C fan; Gas: Mark 3) for 20 minutes, until the egg white is set.

    Meanwhile, peel the onion half and cut it into strips. Wash parsley, shake dry, and cut into strips.

    Remove avocados from the oven, season with pepper, arrange on plates or a platter, and sprinkle with onion and parsley strips.
