Spoonsparrow Baked Oats vegan provide a good start to the day.

Ingredients

  • 100 g oats
  • 1 apple
  • 200 g strawberries (or raspberries)
  • 2 tbsp peanut butter
  • 50 g finely chopped almonds
  • 3 tbsp maple syrup
  • 5 tbsp almond or oat milk
  • 1 tsp chia seeds

Instructions

    Cover the oats with hot water and let them soak for 5–10 minutes. Meanwhile wash, peel and grate the apple; wash, pat dry and clean the berries.

    Combine oats with apple, peanut butter, almonds, 50 g berries (about one handful), maple syrup, and almond or oat milk; spread evenly in a baking dish. Bake the Baked Oats vegan in a preheated oven at 180 °C (convection 160 °C; gas: level 2–3) for 20 minutes.

    In the meantime cook the remaining berries with chia seeds and leftover maple syrup in a pan over medium heat until soft.

    Serve the vegan baked oats with compote and yogurt in bowls or on plates immediately.
