Ingredients
- 100 g natural nacho chips
- 1 red bell pepper
- 1 Spring onion
- 1 blue onion
- 1 Garlic clove
- 1 tbsp oil
- 3 cooked potatoes
- 3 Stalks Parsley
- Salt
- Pepper
- 1 tbsp jalapeños (optional)
- 200 g shredded Gouda cheese for baking

Preheat the oven to 200°C (top/bottom heat).

Place the nacho chips in a baking dish. Wash, halve, seed and dice the bell pepper. Trim and slice the spring onions into rings. Roughly chop the blue onion. Peel and crush the garlic. Heat the oil in a non-stick pan and sauté the vegetables for 3-5 minutes while stirring. Dice the potatoes. Wash the parsley, shake dry, pick off leaves and mix with the vegetables. Season with salt and pepper; finely chop jalapeños and add if desired or omit.

Sprinkle the mixture over the nachos, top with shredded cheese, and bake in the preheated oven for 15-25 minutes until the cheese is melted.
