Ingredients
- 4 tbsp peanut oil
- 8 wheat tortillas
- 150 g cheese (strong Gouda or raclette cheese)
- 150 g cooked ham
- 4 tomatoes
- 1 Shallot
- 2 tbsp chopped parsley
- Lemon juice
- Salt
- ground pepper

Wash the tomatoes, quarter them, remove seeds and dice.

Peel the shallot and finely chop it. Mix with parsley and tomatoes, then season with lemon juice, salt and pepper.

Distribute cheese and ham on four tortilla slices. Top with tomatoes and place another tortilla over each. Sequentially cook in a hot pan with a little oil, browning each side for about 1-2 minutes until golden brown. Flip and repeat on the other side. Remove from the pan, cut into portions and serve.
