Baked Meatballs with Tomatoes and Cheese

Ingredients
- 2 slices of toast bread
- 1 onion
- 250 g mixed ground meat
- 1 small egg (size S)
- 4 tsp Pesto Rosso (ready-made product)
- 1 tsp Dried oregano
- Salt
- ground pepper
- 3 tbsp olive oil
- 1 beef tomato
- 150 g mozzarella
- fresh herbs to taste (for garnish)

Pour lukewarm water over the toast bread and let it soak for 5 minutes. Peel and dice the onion. Place the ground meat in a bowl. Add the egg, Pesto Rosso, oregano, diced onion, and squeezed toast bread. Season with salt and pepper. Mix everything into a smooth meat dough. Shape the dough into meatballs. Heat 2 tbsp olive oil and fry the meatballs for about 10 minutes until cooked through.

Rinse the tomato and cut it into thicker slices. Heat the remaining olive oil in a fireproof pan and quickly sear the tomato slices on both sides over high heat. Remove from the heat. Place the meatballs on top. Slice mozzarella and distribute it over the meatballs. Melt the mozzarella under a preheated grill. Serve the baked meatballs with tomatoes and cheese, garnished with fresh herbs as desired.
