Ingredients

  • 24 mussels
  • 4 tbsp grated Parmesan
  • 0.5 red chili pepper, finely chopped
  • 2 tbsp parsley, finely chopped
  • 20 g butter
  • 1 tbsp flour
  • 250 ml milk
  • freshly ground pepper
  • freshly grated nutmeg
  • Salt

Instructions

    Preheat the oven grill. Wash the mussels and simmer them in a little salted water covered for about 10 minutes, shaking the pot occasionally to encourage all shells to open. Discard any mussels that remain closed as they may be spoiled.

    Open each mussel completely and reserve the meat inside one half of the shell.

    Melt the butter gently in a saucepan, sprinkle the flour over it and sauté briefly. Gradually whisk in the milk, bringing the mixture to a boil. Let it simmer for a short while, then remove from heat. Stir in parsley, chili, and parmesan. Season with pepper, nutmeg, and salt.

    Arrange the mussels on a baking tray, spooning about one teaspoon of sauce onto each shell. Place under the hot oven grill and bake for 2–3 minutes until golden‑yellow gratinated.
