Baked Shrimp

Ingredients

  • 1 large vegetable onion
  • 2 tbsp parsley and oregano (freshly chopped)
  • 100 g sheep cheese (cubed)
  • 200 g small shrimp (or crabs)
  • 1 kg tomatoes (deveined, seeded, diced)
  • 1 slice toasted bread (cubed)
  • 50 g Parmesan (freshly grated)
  • 3 tbsp olive oil
  • 125 ml white wine
  • 2 Garlic cloves
  • Salt
  • pepper (ground)

Instructions

    Slice the onion lengthwise into wedges, then cut into pieces. Rinse the shrimp.

    Combine the toast cubes with the garlic in a mortar, mix in the parmesan and stir with 2 tbsp olive oil.

    Turn on the oven grill.

    Sauté the onion pieces in oil, add the tomato cubes, cook briefly, then add herbs and sheep cheese and season with salt and pepper.

    Spread the mixture into four heat‑proof dishes, top with shrimp, sprinkle all with cheese crumbs, and bake over medium heat for a few minutes.
