Baked Salmon Fillet

Ingredients
- 2 stalks leeks (ca. 400 g)
- 2 tbsp butter
- 200 ml vegetable broth
- 50 g crème fraîche
- 100 ml heavy cream (30% fat)
- 100 g smoked salmon
- Salt
- Pepper (freshly ground)
- freshly grated nutmeg
- 2 tbsp dill sprigs
- 4 slices stale white bread
- 80 g soft butter
- 1 tbsp horseradish (jarred)

- 600 g salmon fillet (4 fillets)
- 4 tbsp olive oil
- dill sprigs (for garnish)
Instructions

Preheat the oven to 250°C with upper and lower heat.

Clean, wash, and slice the leeks into diagonal pieces. Sauté in butter and pour in broth. Steam for about 10 minutes.

Meanwhile, crumble the stale bread using an electric grinder.

Whisk the butter until foamy, fold in bread crumbs and horseradish, season with salt and pepper.

Wash salmon fillets, pat dry, season with salt and pepper. Heat oil in a pan and sear the salmon for 1 minute on each side.

Remove fish from pan and place on parchment-lined baking tray. Spread horseradish mixture over it and bake in preheated oven for 3-4 minutes until bubbling.

Stir crème fraîche and cream into the leeks, dice smoked salmon and add. Season with salt, pepper and nutmeg. Wash dill, chop and fold in.

Plate salmon with leek mixture, garnish with leek strips and dill sprigs.

Serve immediately.
