Marinated Raw Fish (Ceviche)

Ingredients
- 400 g fish fillet (preferably whitefish or tuna)
- 4 lemons
- 1 orange
- Sea salt
- Pepper
- 4 tomatoes
- 1 stalk of celery (or cucumber)
- 1 red chili pepper
- 2 Spring Onions
- 1 Garlic clove
- 2 stems of coriander
- 0.5 red bell pepper
- green onion strips (for garnish)
- chives (for garnish)

Wash tomatoes and bell pepper. Clean the pepper, core the tomatoes, remove the stem base, and dice the flesh of both into small cubes. Trim celery and spring onions and finely dice them as well. Wash chili, peel garlic, and finely chop both. Mix everything together, season with salt and pepper, cover and let sit for 2 hours. Rinse coriander, shake dry, and chop. Before serving, fold it into the vegetable mixture.

Wash fish fillet, pat dry, and cut into 3 cm cubes. Optionally tie small bundles with chive stems and green onion strips. Salt the fish and let rest for 10 minutes. Meanwhile juice lemons and orange. Pour the citrus juice over the fish pieces and marinate for about 30 minutes. Before serving, drain briefly and arrange on plates. Garnish with a few vegetable cubes and serve remaining vegetables separately.
