Ingredients
- 800 g Shrimps (ready to cook)
- 75 g Orange marmalade
- 200 ml orange juice
- 2 tbsp white wine vinegar
- Salt
- white pepper (ground)
- chili powder
- 1 Garlic clove
- 2 bunches basil
- 3 oranges
- 2 tbsp lemon juice

Place shrimps in a sieve, rinse cold and drain.

Warm the marmalade for the sauce and strain through a sieve. Add orange juice and vinegar, bring to a brief boil. Remove from heat, season with salt, pepper, and chili powder. Peel the garlic and squeeze it into the mixture. Mix shrimps with the hot sauce.

Wash basil, shake dry, cut leaves—except a few for garnish—into fine strips. Thoroughly peel oranges with a sharp knife, removing the white pith. Slice fruit crosswise, halve the slices, and mix some with basil strips under the shrimps. Finish with lemon juice and garnish with remaining orange slices and basil.
