Ingredients

  • 1 Hokkaido pumpkin (ca. 1.2 kg)
  • 1 onion
  • 6 Garlic cloves
  • 2 fresh bay leaves
  • 4 sprigs thyme
  • 1 tsp fennel seeds
  • 4 tbsp olive oil
  • Salt
  • freshly ground pepper

Instructions

    Preheat the oven to 180°C fan-forced. Wash the pumpkin (no need to peel), halve, core, cut into wedges and arrange on a baking tray.

    Peel and quarter the onion. Press the garlic cloves and add them with the onion, bay leaves, thyme, and fennel seeds to the pumpkin. Drizzle with olive oil, season with salt and pepper, then bake in the oven for 30-40 minutes. Remove and serve immediately.
