Ingredients
- 4 chicken breast fillets
- 4 slices Parma ham
- 2 balls mozzarella
- 0.5 bunch sage
- Sea salt
- pepper (from grinder)
- 3 tbsp olive oil

Wash the chicken breasts, pat dry and make a side cut so they can be opened and flattened by pounding. Top each with a slice of ham and sliced mozzarella. Season with sea salt, pepper and scatter some sage leaves. Roll up and secure with toothpicks.

Line a baking sheet with foil and brush with 1 tbsp oil. Place the chicken roulades on it, season, add remaining chopped sage leaves, drizzle with olive oil and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes until golden brown. Turn them two to three times during baking. Remove from oven, take out toothpicks and serve.
