Cheese-Filled Chicken Breast

Ingredients

  • 4 chicken breast fillets
  • 0.5 bunch Basil
  • 160 g goat cheese
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 0.5 head arugula
  • juice of one lemon
  • 1 tsp Honey
  • 3 tbsp olive oil

Instructions

    Wash and pat dry the chicken breasts. Cut a pocket on each side.

    Remove leaves from the basil, roughly chop, mix with goat cheese, salt, and pepper. Fill the pockets and secure with toothpicks. Season the outside with salt and pepper and sear in hot oil on both sides. Reduce heat to medium-low and cook for about 15-20 minutes, turning occasionally until done.

    Meanwhile wash, trim, and tear the arugula into small pieces. Whisk lemon juice with a splash of water, honey, and olive oil. Season with salt and pepper. Toss the salad and plate it.

    Halve the cooked chicken breasts, place on top of the salad, and serve.
