Indian Roasted Chicken

Ingredients

  • 2 Sweet potatoes (about 400 g)
  • 4 untreated oranges
  • 4 red onions
  • 3 Garlic cloves
  • Salt
  • pepper (ground)
  • 2 tsp Curry powder
  • 1 chicken (about 1.4 kg)
  • 4 tbsp liquid ghee
  • 1 tsp paprika powder (optional spicy or sweet)
  • mint (for garnish)

Instructions

    Preheat the oven to 180°C with fan and top heating.

    Peel the sweet potatoes and cut them into large chunks. Wash the oranges hot and cut them into wedges. Peel the outer skin of the onions and cut them into wedges. Crush the garlic cloves. Season the vegetables with salt, pepper and 1 tsp curry powder and spread them on a baking tray. Rinse the chicken and pat it dry. Season the inside with salt and pepper. Tie the chicken with kitchen twine in shape and place it breast side up on the vegetables. Put it into the oven and roast for 50-60 minutes.

    Mix the ghee with about 1 tsp salt, paprika powder and remaining curry powder. Brush the chicken with the ghee mixture after about 20 minutes, then every 10 minutes thereafter.

    Serve by arranging the chicken with the vegetables on a plate, sprinkle some mint and serve with a yogurt raita.
