Baked Beetroot

Ingredients
- 2 cooked beetroot (vacuum‑sealed)
- 80 g rice
- 4 slices Camembert cheese
- Salt
- Pepper
- arugula
- cucumber tomatoes

Halve the beetroot and gently scoop out a little of the flesh with a teaspoon. Puree the remaining beetroot.

Rinse the rice in a sieve under running water, then bring to a boil in just over twice the amount of lightly salted water together with the beetroot puree. Cover and simmer on low heat for about 20 minutes until the rice is cooked. Season the rice with salt and pepper and fill the beetroot halves. Place a slice of camembert on top of each filling, sprinkle with one tablespoon of rice, then transfer to a baking dish.

Bake in a preheated oven at 180 °C for 15–20 minutes until golden. Garnish with arugula and cucumber tomatoes as desired.
