Baked Bananas in the Oven

Spoonsparrow baked bananas are the perfect way to rescue brown bananas from waste – Clean Eating for the environment!
Ingredients
- 500 g ripe bananas (4 ripe bananas)
- 0.5 Vanilla pod
- 200 g Skyr
- 1 tbsp flaxseed oil
- 60 g toasted almond kernels (4 tbsp)
- 4 tsp maple syrup

Wash unpeeled bananas, pat dry and place on the oven rack. Bake in a preheated oven at 200 °C (convection 180 °C; gas: level 3) until the skin is evenly blackened; this takes about 10 minutes.

Meanwhile split the vanilla pod lengthwise and scrape out the seeds with a knife. Stir Skyr with the seeds and flaxseed oil until smooth. Toast almonds in a hot pan without fat over medium heat for 3 minutes.

Remove bananas from the oven. Separate the upper half of the skin from the hot fruit. Spread Skyr on four plates, arrange bananas on top. Drizzle maple syrup over the baked bananas and sprinkle with almonds before serving.
