Keto Chia Pudding

Spoonsparrow Keto-Chia-Pudding ❤️ The perfect breakfast for a keto diet!

Ingredients

  • 350 ml unsweetened almond milk
  • 1 tsp vanilla powder
  • 60 g chia seeds
  • 1 tbsp ground almonds
  • 300 g small papaya (1 small papaya)
  • 1 tbsp Lemon Juice
  • 2 tbsp Flaxseed oil
  • 30 g walnut kernels

Instructions

    Whisk almond milk, vanilla, chia seeds and ground almonds together, let sit for about 20 minutes to absorb liquid, then stir again. Divide the chia pudding into four glasses and cover; refrigerate for 12 hours, preferably overnight.

    On the next day, pit the papaya and cut the flesh into bite-sized pieces. Mix papaya with lemon juice and flaxseed oil and let it sit for about 10 minutes.

    Meanwhile, roughly chop the walnuts. Spoon the papaya mixture over the keto chia pudding in each glass and sprinkle with nuts.
