Spoonsparrow Baked Bananas: A delicious dessert from Asian cuisine that is irresistible.

Ingredients

  • 1 large egg
  • 1 tbsp brown sugar
  • 4 tbsp cornstarch
  • 2 tbsp tapioca flour
  • 1 tsp Baking powder
  • a pinch salt
  • 50 ml unsweetened coconut milk (only the thick layer)
  • 4 firm bananas
  • oil for frying
  • honey for serving

Instructions

    Whisk the egg with the sugar in a bowl. Add the flours, baking powder and salt, then mix with the coconut milk to form a smooth batter. Let the batter rest for 10 minutes.

    Meanwhile, peel the bananas and cut them into 4–5 pieces.

    Heat oil in a pan, wok or deep fryer. The oil is hot enough when small bubbles rise on a wooden spoon held in it. Dip the banana pieces into the batter and fry in the hot oil over medium heat until they float and turn golden‑brown, about 3–4 minutes.

    Drain the baked bananas on kitchen paper, place them in bowls, pour hot honey over them and serve.
