- 2 tsp butter
- 4 tsp liquid honey
- 1 tbsp Lemon Juice
- 2 stalks lemon balm
- 4 bananas
- 4 tbsp Coconut flakes

Melt butter and honey in a small saucepan and let cool. Stir in lemon juice. Wash, dry, shake off excess water, and finely chop the lemon balm. Whisk into the butter-honey mixture. Score each banana lengthwise around the peel so that one half of the peel can be peeled away.

Place bananas on a parchment-lined baking sheet or in a baking dish. Brush with the butter-honey-lemon balm mixture, sprinkle coconut flakes on top, and bake in a preheated oven at 200 °C (180 °C fan; gas range: level 3–4) for about 5 minutes. Remove and serve the baked banana without dough.
