Baked Artichoke

Ingredients
- 4 artichokes
- Salt
- 1 splash Lemon juice
- 80 g freshly grated Parmesan
- 6 tbsp breadcrumbs
- 6 tbsp heavy cream (at least 30% fat)
- 1 Garlic clove
- pepper (ground)
- butter (for the dish)
- 40 g butter (in small cubes)

Wash, trim, and halve the artichokes lengthwise, removing the choke. Boil them in salted water with a splash of lemon juice for about 15 minutes. Preheat the oven to 200°C (400°F).

Whisk together Parmesan, half the breadcrumbs, and cream. Peel the garlic, squeeze it into the mixture, stir in, and season with salt and pepper. Drain the artichokes well, place them in a buttered baking dish, and fill with the cheese mixture.

Sprinkle the remaining breadcrumbs on top, dot with butter cubes, and bake for about 15 minutes until golden. Serve hot, optionally with tomato sauce.
