Ingredients
- 400 g Carrots
- 60 g almonds (blanched)
- 5 young garlic cloves (quartered)
- 2 tbsp olive oil
- 100 ml Vegetable broth
- 2 tbsp fruit vinegar
- Salt
- 1 tbsp fresh coriander (chopped)

Wash, peel and cut the carrots into thin long strips—like ribbon noodles.

Sauté the garlic, almonds, and carrots in olive oil, pour in the vegetable broth and let everything simmer for about 4 minutes. Season with vinegar and salt, stir in chopped coriander. Serve warm.
