Asian Vegetable Rice Skillet

Ingredients
- 250 g rice
- Salt
- 100 g lentils (soaked)
- 2 cm ginger
- 3 Carrots
- 2 cloves garlic
- 3 spring onions
- 0.25 Cucumber
- 2 tbsp butter
- 50 ml Vegetable broth
- Pepper
- 2 tbsp Light soy sauce

Cook the rice in plenty of salted water according to package instructions, drain and let sit. Drain the lentils and cook them in plenty of water. Drain, set aside and add to the rice. Peel the ginger and dice finely. Peel the carrots and cut into 0.5 cm cubes.

Peel the garlic cloves and finely chop. Clean the spring onions, halve them and slice lengthwise into strips. Wash the cucumber, deseed it and also slice lengthwise into strips.

Sauté the vegetables in butter and pour in broth. Steam with a closed lid for about 3 minutes and mix with the rice. Season with salt, pepper and soy sauce, serve in bowls.
