Gratinated Artichokes

Ingredients

  • 8 artichokes
  • 1 untreated lemon (juice and zest)
  • 60 g breadcrumbs
  • 2 tsp freshly chopped thyme
  • 2 Garlic cloves
  • 4 tbsp freshly grated Parmesan
  • olive oil (cold‑pressed)

Instructions

    Preheat the oven to 180°C on top heat.

    Clean the artichokes, trim the stems, and cook them in salted water with lemon juice for about 15 minutes. Use a skewer to remove the choke and place the artichokes in a gratin dish (bind if needed).

    Fill each artichoke with a mixture of breadcrumbs, thyme, pressed garlic, grated Parmesan, and lemon zest; drizzle 1–2 tbsp olive oil over each one.

    Bake in the oven for about 10 minutes until golden brown.
