Baked Apple with Vanilla Sauce
Baked apple with vanilla sauce from Spoonsparrow, a delicious dessert for cold days.
Ingredients
- 4 sour apples (e.g., Boskop)
- 75 g chopped almond kernels
- 3 tsp raisins
- 45 g maple syrup (3 tbsp)
- 1 pinch Ground cinnamon
- 50 g marzipan dough
- 20 g butter (in pieces)
- 250 ml milk (3.5% fat)
- 1 Vanilla bean
- 1 tsp Cornstarch
- 3 egg yolks

Wash the apples and use an apple corer to remove the core.

For the filling, mix half of the almonds with raisins, 1 tbsp maple syrup, and cinnamon; finely chop the marzipan dough and fold it in. Stuff the apples with this mixture and place them in a baking dish. Sprinkle with the remaining almonds. Distribute butter pieces on top and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 30–40 minutes.

Meanwhile, take 3–4 tablespoons of milk for the vanilla sauce and whisk it smooth with the cornstarch. Split the vanilla bean lengthwise, scrape out the seeds, and bring the bean and seeds to a boil in the remaining milk. Remove from heat.

Whisk the cornstarch with egg yolks and set aside some milk; stir this into the vanilla milk and gently heat (do not boil) while stirring until the sauce thickens. Taste with the remaining maple syrup, let it cool slightly, and stir occasionally.

Remove the baked apples from the oven, arrange them on plates, and serve with warm vanilla sauce.
