Hazelnut Jam Cookies

The hazelnut jam cookies from Spoonsparrow are light, delicious and fruity!

Ingredients

  • 375 g spelt flour
  • 1 tsp Baking powder
  • 200 g raw cane sugar
  • a pinch salt
  • 1 packet vanilla sugar
  • 250 g butter
  • 1 Egg white
  • 120 g hazelnuts
  • 100 g currant jam
  • powdered sugar (for dusting)

Instructions

    Knead the spelt flour, baking powder, raw cane sugar, vanilla sugar, salt, butter pieces, egg white and ground hazelnuts into a dough. Shape it into a ball, wrap in cling film and refrigerate for 30 minutes.

    Roll out the dough on a floured surface to about 0.4 cm thickness and cut out star-shaped cookies with a star cutter. From half of the cookies, cut smaller stars from the center. Place the cookies on a parchment-lined baking sheet and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 12 minutes until lightly golden brown. Remove and let cool slightly.

    Heat the jam in a saucepan over medium heat. Brush the jam onto the cookies that do not have stars, place the remaining cookies on top and press gently. Let the hazelnut jam cookies dry and dust with powdered sugar.
