Nikolaus Cookies

Ingredients
- 175 g butter
- 150 g cane sugar
- 2 Eggs
- 1 tsp cinnamon
- 0.25 tsp cloves powder
- 0.25 tsp Ginger powder
- 250 g peeled, ground almonds
- 400 g flour
- 300 g powdered sugar
- 1 Egg white
- 1 tbsp Lemon Juice
- red food coloring
- sprinkles
- coconut flakes
Instructions

Whisk butter with sugar and eggs until fluffy. Fold in spices and almonds. Add flour and knead into a smooth dough. Wrap in plastic wrap and refrigerate for about 1 hour.

Roll out dough on a floured surface and cut 4.5 cm diamonds. Place on parchment-lined baking sheet, slightly bend opposite corners. Bake at 180°C for about 12-15 minutes. Remove and cool.

For decoration, whisk 200 g powdered sugar with egg white to make red glaze; whisk 100 g powdered sugar with lemon juice and red food coloring for white glaze. Brush each cookie one-third with red glaze, the rest with white glaze. Decorate faces and hats with sprinkles and white glaze, and beards with coconut flakes.
