Baked Apple with Ice Cream
Oh wonderful winter time: try the delicious baked apple with ice cream from Spoonsparrow!
Ingredients
- 6 large apples
- 100 g Amaretti (Italian almond cookies)
- 5 dried apricots
- 3 tbsp raisins (can also be replaced with cranberries)
- 70 ml apricot brandy
- 40 g butter (well chilled; in flakes)
- 40 g chopped almonds
- 200 ml dry white wine
- 12 scoops vanilla ice cream (chewed or homemade)
- butter (for greasing the pan)
- powdered sugar (for dusting)

Coarsely chop the Amaretti. Dice the apricots, add raisins, pour apricot brandy over and let steep for about 30 minutes. Wash the apples, cut off a lid with stem from the top quarter, and use a cutter to remove the core from the lower halves. Arrange the apples side by side in a butter‑greased baking dish. Mix almonds into the Amaretti mixture and spoon small amounts into each apple. Spread the remaining filling around the apples. Top with butter flakes and bake in a preheated oven at 200 °C, fan‑forced, middle rack, for about 25–30 minutes. After about 10 minutes pour wine over and place lids on.

Distribute the finished baked apples onto plates and serve each with two scoops of vanilla ice cream on dessert platters.
