Ingredients

  • 500 g beef fillet (pre‑cooked, center cut)
  • Salt
  • Pepper (freshly ground)
  • 20 g clarified butter
  • 3 onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 tbsp olive oil
  • 1 baguette (cut lengthwise and crosswise)

Instructions

    Wash the meat, pat dry, season with salt and pepper, then sear it all over in hot clarified butter in a grill pan. Reduce heat and let the fillet cook to pinkness.

    Meanwhile, peel the onions and slice into strips. Wash the bell peppers, halve them, remove seeds, and cut into bite‑sized pieces.

    Heat olive oil in another grill pan and toast the baguette halves cut side down until golden brown. Remove and set aside.

    Add the onion strips and bell pepper pieces to the pan, turning occasionally until they turn golden yellow. Season with salt and pepper. Take the meat out of the pan, let it rest briefly, then slice into chunks.

    Distribute the vegetables over the baguette slices, top with steak chunks, and serve with ketchup or tomato sauce as desired.
