Ingredients

  • 400 g mango flesh (peeled, seeded, and diced)
  • 100 g sugar
  • 1 lime (juice and zest)
  • 1 whole fresh egg white

Instructions

    Blend the fruit in a blender and strain through a sieve.

    Cook the sugar with 4 tbsp water until syrupy, then cool and mix with the puree, lime juice, and zest. Whisk the egg white to stiff peaks and fold into the mixture evenly. Pour the fruit mass into a shallow metal pan in the freezer, stirring occasionally to prevent large crystals from forming, and freeze.

    When the mixture is half frozen, pour it into cups, insert sticks, and freeze for 2–3 hours.
