Ingredients
- 200 g green olives (pitted)
- 40 g chopped almond kernels
- 2 Tbsp grated Parmesan
- 1 tsp pickled green peppercorns
- 5 tbsp olive oil
- Lemon juice
- Salt
- pepper (ground)
- 2 onions
- 4 baguette slices
- 50 g black olives (pitted)
- Basil

Drain the olives for the cream. Lightly toast the almonds in a dry pan, let cool, then blend with olives, almonds, Parmesan, peppercorns and about 4 tbsp oil into a paste. Season with lemon juice, salt and pepper.

Peel the onions, slice into rings and gently sauté in the remaining oil until translucent. Grill the baguette slices, spread the olive cream on them, top with onion rings and olives, and garnish with basil before serving.
