Ingredients

  • 500 g lobster (2 lobsters)
  • 1 baguette
  • 0.5 cucumber
  • 1 bunch tarragon
  • 1 Shallot
  • 2 tbsp mayonnaise
  • Salt
  • Pepper

Instructions

    Place the lobsters head‑first in boiling water for 3 minutes, remove and shock with cold water. Crack the shells and extract the meat from tail, claws, and joints. Slice the lobster tail into thick rounds.

    Peel the cucumber and slice it thinly.

    Wash and dry the tarragon.

    Peel the shallot and finely chop it.

    Halve the baguette horizontally. Spread mayonnaise on the bottom half. Arrange cucumber slices and lobster rounds on top, sprinkle with chopped shallots. Season with salt and pepper, then scatter tarragon over the filling. Place the other half of the baguette on top. Slice into four equal pieces and serve.
