Soy cress mix is an excellent protein- and fiber-rich snack suitable for a slimming diet.

Ingredients

  • 0.5 box garden cress
  • 250 g cucumber (half a cucumber)
  • 2 tsp paprika powder (rosy hot)
  • 100 ml soy drink (soy milk) (1.2% fat)
  • Salt
  • Also: ice cubes

Instructions

  1. 1.

    Cut the cress from the bed with kitchen scissors and place it in a stand mixer or tall container.

  2. 2.

    Wash the half cucumber thoroughly, dry, peel, halve, seed, and dice.

  3. 3.

    Place 1½ tsp paprika powder on a plate. Moisten the top of a glass with one piece of cucumber and press into the paprika to create an even red rim.

  4. 4.

    Blend the cress with cucumber cubes, remaining paprika, soy drink, and a pinch of salt in the stand mixer or hand blender, then pour into the prepared glass. Crush ice cubes in an ice crusher and add gently.
