Quince Slices
Quince slices: pumpkin seeds not only add great flavor but also provide a relatively high amount of magnesium that strengthens nerves and muscles.
Ingredients
- 6 whole grain crackers
- 300 g pumpkin seeds
- 50 g millet
- 0.5 lime
- 1 vanilla pod
- 300 g quince (2 quinces)
- 5 eggs
- 120 g raw cane sugar
- 3 tbsp Milk (3.5% fat)
- 2 tbsp Maple syrup
Instructions

Break the crackers into large pieces. Finely grind them with pumpkin seeds and millet in a food processor.

Squeeze half of the lime to get juice.

Split the vanilla pod lengthwise and scrape out the seeds.

Wash, dry, peel, and finely grate the quinces. Mix with lime juice.

Separate the eggs. Whisk the egg whites with 2 tbsp cold water until very stiff. Gradually add sugar while whisking until dissolved.

Fold in the yolks one at a time.

Add the ground cracker mixture, grated quince, and vanilla seeds to the egg batter and fold gently.

Line a baking sheet with parchment paper. Wet a rubber spatula with water and spread the dough onto the sheet. Bake in a preheated oven at 200 °C (180 °C fan or gas level 3) for 20–25 minutes.

Whisk milk and maple syrup together in a small bowl. While still hot, brush the quince cake with this mixture. Cut into 30 rectangular pieces and let cool.
