Bacon Beans

The bacon beans from Spoonsparrow work wonderfully as a side dish for hearty meals!

Ingredients

  • 1 kg princess beans
  • 16 slices turkey bacon
  • 2 tbsp olive oil
  • 1 Red Onion
  • 1 tsp chopped bean herb
  • 2 tbsp white wine vinegar
  • 4 tbsp vegetable broth
  • Salt
  • Pepper

Instructions

    Wash, trim and cook the beans in boiling salted water for about 8 minutes. Drain, rinse with cold water, let drain well and form into 16 bundles. Wrap each bundle tightly with bacon.

    In a hot pan, brown the bean bundles all around until golden brown, remove and keep warm. Dice the onion finely and sauté it with the bean herb in the remaining fat. Deglaze with vinegar and broth. Season with salt and pepper to taste.

    Arrange the bacon-wrapped beans on plates and drizzle with the bacon vinaigrette before serving.
