Ingredients
- 150 g butter
- 150 g sugar
- 1 pinch salt
- 3 eggs
- 300 g flour
- 1 tsp Baking powder
- 70 ml lime juice
- 120 g butter
- 60 g powdered sugar
- 120 g plain cream cheese
- 2 egg whites
- 1 tbsp Lemon Juice
- 400 g powdered sugar
- food coloring (optional)
- candy pearls
- candy flowers
Instructions
-
1.
Preheat the oven to 180°C (350°F) with fan and top/bottom heat.
-
2.
Cream the butter and sugar together, then add the eggs one at a time with a pinch of salt. Mix the flour with baking powder and stir it into the butter‑egg mixture along with the lime juice. Pour the batter into a springform pan lined with parchment paper, smooth the surface, and bake for 30–40 minutes in the preheated oven. Remove from the oven, let cool, then crumble into a bowl.
-
3.
Cream the butter with powdered sugar and gradually fold in the cream cheese.
-
4.
Combine the cake crumbs with the cream mixture and knead until well blended; shape small balls. Cover and refrigerate for about an hour.
-
5.
Beat the egg whites with lemon juice until stiff peaks form, then gradually whisk in the powdered sugar. Continue beating until the mixture becomes a thick, glossy glaze. Color the glaze with food coloring if desired.
-
6.
Thread the balls onto lollipop sticks and coat them with the glaze. Garnish with candy pearls and flowers, let dry, then serve on a plate of sugar or in a small bowl.
