Avocado Smoked Fish Wraps

Ingredients
- 4 tomato tortillas
- 250 g smoked trout fillet
- 1 can borlotti beans (drained weight 250 g)
- 1 tsp cumin
- 0.5 tsp Coriander seeds
- 2 Avocados
- 2 tbsp lemon juice
- 1 green chili pepper (chopped)
- 1 red onion (finely diced)
- 2 Celery stalks
- Salt
- black pepper (freshly ground)
Instructions

Drain the beans and reserve the liquid.

Toast cumin and coriander in a dry pan, then grind them in a mortar. Blend the spices with the beans and 3 tbsp of bean liquid until smooth. Season with salt and pepper.

Peel, halve, pit the avocados and blend the flesh with lemon juice.

Wash, trim, and slice celery thinly. Stir into the avocado mixture along with onion and chili (reserve 1 tbsp for garnish). Season with salt and pepper.

Warm tortillas as directed on the package. Spread bean puree over each tortilla, sprinkle chopped trout fillets, then top with avocado spread. Roll up and serve sprinkled with reserved chili and onion cubes.
