Ingredients

  • 80 g pearl barley
  • Salt
  • 500 g chicken breast fillet
  • Pepper
  • 1 l vegetable broth
  • 1 bunch soup greens
  • 1 red bell pepper
  • 3 tbsp chives

Instructions

    Add the pearl barley to boiling salted water and cook according to package instructions. Season the chicken with salt and pepper, then simmer in gently boiling broth for 20 minutes. Meanwhile, wash and trim the soup greens, cutting them into strips.

    Quarter the bell pepper, remove seeds, and add it along with the trimmed soup greens and drained pearl barley to the stew. Cut the cooked chicken into bite‑sized pieces and return to the pot. Season generously with salt and pepper, then sprinkle with chives before serving.
