Avocado Chocolate Mousse with Pistachios from Spoonsparrow is a must-try for all health-conscious chocoholics.

Ingredients

  • 30 g Coconut chips (3 tbsp)
  • 45 g pistachios (3 tbsp)
  • 2 ripe avocados
  • 1 ripe banana
  • 30 g Cocoa powder (4 tbsp; unsweetened)
  • 15 g Cacao Nibs (1 tbsp)
  • 1 pinch cinnamon

Instructions

    Toast coconut chips and pistachios in a hot pan without fat for 3 minutes over medium heat. Set aside to cool.

    Halve avocados, remove pits, scoop out the pulp, and roughly dice it. Peel and chop the banana into small pieces. Puree the avocado cubes with banana pieces, cocoa powder, cacao nibs, and cinnamon using an immersion blender.

    Fill avocado chocolate mousse into small bowls, sprinkle with pistachios and coconut chips, and chill for about 2 hours before serving.
