Autumn Vegetable Stir-Fry

Ingredients
- Petersilie
- 6 EL Olivenöl
- Salz
- Pfeffer
- 1 rote Paprikaschote
- 1 Zucchini
- 250 g Brokkoli
- 1 Bund Frühlingszwiebeln
- 1 Knoblauchzehe
- 200 g Kirschtomaten
- 250 g Naturreis
- 1 Topf Knorr Bouillon (Pur Delikatess)
Instructions

Wash parsley, shake dry and roughly chop. Blend with 4 EL olive oil. Season with salt and pepper.

Halve the paprika, remove seeds, clean, wash and cut into strips. Wash zucchini, trim, halve lengthwise and slice. Clean broccoli, wash and divide into small florets. Peel broccoli stems and slice. Trim scallions, wash and cut into pieces. Peel garlic and chop. Wash cherry tomatoes.

Cook rice according to package instructions in salted water.

Heat remaining olive oil in a large pan. Briefly sauté tomatoes, remove. Add broccoli, paprika and garlic to the pan and fry for about 4 minutes. Add zucchini and scallions and fry another 3 minutes. Season with pepper. Dissolve Knorr Bouillon Pur Delikatess in 150 ml hot water and pour over vegetables. Cover and simmer for about 3 minutes.

Reheat tomatoes in the vegetable pan for about 1 minute. Season with salt and pepper. Drizzle with parsley oil. Drain rice and serve alongside.
