Autumn Salad with Chicory, Pears, Nuts and Blue Cheese

Ingredients

  • 2 heads yellow chicory
  • 125 g arugula
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp liquid honey
  • 1 pinch medium-hot mustard
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp walnut oil (or almond oil)
  • 1 ripe pear
  • 120 g blue cheese
  • 4 tbsp walnuts

Instructions

    Clean and wash the chicory and arugula, then tear into bite‑sized pieces as desired. Whisk together vinegar, lemon juice, honey, mustard, salt and pepper to make a dressing; fold in the oil. Marinate the chicory and arugula with about half of the dressing and arrange on plates.

    Wash the pears, quarter them, remove the core and cut the fruit into thin longitudinal slices. Arrange on the salad and drizzle with the remaining dressing. Crumble the cheese into pieces and sprinkle over the salad with walnuts. Finish with a light grind of pepper.
