Ingredients

  • 2 carrots
  • 1 tbsp Lemon Juice
  • 0.5 bunch Chives
  • 0.5 bunch Parsley
  • 150 g Sour cream
  • a pinch sea salt
  • freshly ground pepper
  • curry powder
  • 4 slices fine whole grain bread
  • 1 tbsp chopped walnut kernels

Instructions

    Peel and grate the carrots coarsely on a vegetable grater. Mix the carrot shreds with lemon juice.

    Wash and dry the herbs. Slice the chives into rings, finely chop the parsley leaves.

  3. 3.

    Combine sour cream with half of the carrot shreds and half of the herbs. Season with salt, pepper, and curry powder.

  4. 4.

    Spread the carrot cream onto the bread slices and garnish with the remaining carrot shreds. Sprinkle the rest of the herbs and chopped walnuts on top.
