Asparagus with Hollandaise Sauce and Ham Slices

Ingredients

  • 2 kg white asparagus stalks
  • Salt
  • 200 g butter
  • 2 egg yolks
  • 4 tbsp white wine
  • Pepper
  • 1 pinch sugar
  • 200 g ham slices (cut into strips)
  • chopped parsley (for garnish)

Instructions

    Peel the asparagus and trim the ends. Cook the asparagus skins in 2 L lightly salted water for 20-25 minutes. Drain the skins and reserve the cooking liquid. Return the liquid to the pot and cook the asparagus in it for 12-15 minutes, depending on thickness.

    Melt butter and skim off foam. Whisk egg yolks with white wine in a stainless steel bowl. Place the bowl over a hot water bath and beat the yolk mixture. Gradually pour the liquid butter into a thin stream while whisking until a creamy sauce forms. Season with salt, pepper, and sugar.

    Remove asparagus from the cooking liquid with a slotted spoon and let it drain briefly. Plate the asparagus with Hollandaise sauce and ham slices. Sprinkle chopped parsley on top and serve. Pair with boiled potatoes.
