Green Asparagus Mousse

Ingredients
- 800 g green asparagus
- Salt
- freshly ground pepper
- 8 sheets white gelatin
- 1 Garlic clove
- 2 bunches parsley
- 200 g Sour Cream
- 2 tbsp lemon juice

Wash the asparagus, peel the lower third and trim the ends. Cut the spears into pieces. Cook asparagus in boiling salted water for about 12 minutes, remove, shock in cold water and drain.

Soak gelatin in cold water.

Peel garlic and finely chop. Wash parsley, dry shake and chop leaves.

Blend parsley, sour cream, asparagus and garlic in a blender until smooth; season with salt, pepper and lemon juice. Dissolve the gelatin in a small pot over low heat, then stir into the asparagus mixture.

Line an appropriate mold with cling film, leaving some overhang on the sides. Pour the filling in and smooth the top. Cover with more cling film and refrigerate for about 4–5 hours until set.

For serving, flip the asparagus terrine onto a plate, remove the cling film and slice into rounds.
