Onions Stuffed with Goat Cheese

- 4 large blue onions
- 1 large potato (cooked, from yesterday)
- 100 g pickled goat cheese (drained)
- Salt
- Pepper
- Cress (for garnish)

Peel the onions thoroughly and cook them in boiling salted water for about 10 minutes; then cut off a lid and remove the inner part of the lower half, leaving 3-4 onion layers intact.

Chop 1/4 of the inner part finely, use the rest elsewhere. Peel the potato and mash slightly with a fork. Chop the cheese finely. Mix onions, potato, and cheese together, add 1 tbsp oil, and season with salt and pepper. Fill the onions and place them in a baking dish. Pour about 2-3 mm of oil over the top, drizzle more oil on the onions, tilt the onion lids, cover the dish with foil. Bake at 200°C for about 30 minutes; after 20 minutes remove the foil and finish baking.

Arrange the onions on small plates, garnish with cress, and serve immediately.
