Asparagus Salad with Strawberries and Watercress

Ingredients
- 600 g white asparagus
- Salt
- 1 tbsp butter
- 250 g strawberries
- 1 bunch watercress
- juice of one lemon
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- a pinch sugar
- 2 tsp red pepper flakes

Wash the asparagus, peel it, trim the ends and cut the spears into about 5 cm pieces. Cook in boiling salted water with butter for about 10 minutes until firm, drain, rinse under cold water and let drain.

Meanwhile wash the strawberries, pat dry, remove stems and cut them in halves or quarters depending on size. Wash the watercress, shake off excess water and tear large leaves into bite‑sized pieces. Whisk together lemon juice, oil, salt, pepper and sugar to make a dressing, toss the salad ingredients with it, plate and sprinkle with coarsely crushed red pepper flakes.
