Ingredients

  • 300 g watercress
  • 3 red onions
  • 1 tbsp Vegetable oil
  • 1 tbsp butter
  • 3 tbsp dark balsamic vinegar
  • 4 tbsp olive oil
  • 2 tbsp Orange juice
  • 1 tsp Honey
  • Salt
  • pepper (from grinder)
  • 40 g parmesan (shavings)

Instructions

    Wash the watercress and shake dry or spin it. Peel the onions and slice them into thin rings. Add the vegetable oil with the butter to a pan and brown the onions.

    Whisk the balsamic vinegar with olive oil, orange juice and honey, then season with salt and pepper. Divide the dressing among four bowls, add the salad, top each with caramelized onions, sprinkle fresh parmesan shavings on top, and serve.
